Cured Meats

These are preserved primarily through the application of salt, which removes moisture and inhibits the growth of bacteria. This is an ancient method of preservation that also significantly enhances the flavor! Top examples include prosciutto, salami, and pancetta.

Types of Cured Meats:

  • Prosciutto: This Italian favorite is dry-cured ham, known for its delicate, sweet flavor and melt-in-your-mouth texture.

The Difference Between Smoked and Cured Meats
