French Foie Gras

Foie Gras has long been a staple of classic French cuisine, and over the centuries, has remained relevant. Staying popular among top chefs, young and old, thanks to its exceptional flavor and velvety texture.


Foie Gras is recognized under French law as part of its protected cultural and gastronomic heritage, and Rougie, one of the top French producers of Foie Gras since 1875, has consistently delivered a premium product, both domestically in Europe and abroad. Because of increasingly demanding FDA import regulations, Rougie was forced to find an alternate way to satisfy the ever-demanding hunger for their product in America. Their solution? Settling their operations in Canadian soil, taking advantage of not only the pristine farmland, but also its strategic location to serve the US market, and blending it all with their centuries-old foie gras expertise.


The logical choice was Quebec: a region of Canada thick with French heritage and filled with family-run artisan farms. Rougie shipped over from France not only the best breeds of fine foie gras duck – moulard – but also their artisan methods, perfected over the course of hundreds of years. The ducks are pampered and fed Quebec corn, without any hormones or antibiotics, and carefully and slowly fattened to perfection. French foie gras methods when blended with Canadian sustainable agriculture make for the best of both culinary worlds: and an amazingly rich and buttery foie.
