Duck Foie Gras - Micuit / Ready to Eat, En Torchon, by Rougie

Au Torchon style is a standard in France. Torchon means simply kitchen towel, which is what one usually would use to roll the foie gras, and kept on while poaching and resting, and gives it that cyclindrical shape - oh-so-convenient for perfectly round appetizer-ready slices! This lovely Rougie duck foie gras torchon is a mousse of duck livers with port wine. From Rougie France, it's wrapped in cheesecloth and finished with red ribbons on both ends.
Ingredients: Duck Foie Gras, Porto Wine, salt, sugar, sodium erythorbate, sodium nitrate.

Questions and Answers

Q:Shelf life once open? Can it be re vacuumed sealed, or frozen by portions? Just the 2 of us, and my husband hates anything liver. Thank you.
A:We do not recommend freezing the torchon, as the freezing and thawing processes can damage the texture of the product. Once opened, store in the refrigerator and use within 4-5 days. If you can vacuum seal the product the shelf life should be extended by a few days though.
Q:Is the foie gras organically raised with no antibiotics etc.?
A:The Foie Gras comes from ducks that are not fed any antibiotics or hormones. The product cannot be certified organic as the ducks are fed 100% corn (ground into paste and mixed with water).
Q:shelf life?
A:The shelf life is 9 months, refrigerated at 36°F to 40°F.
