Ficelle of Duck Foie Gras Mousse

A delicious blend of 50% musky and smooth duck foie gras whipped with duck fat, cream and eggs, marinated in sweet Port wine, a ficelle has a long, thin shape that can easily be cut into small, hors d' oeuvre and canapé sized medallions. Cut into 1 inch slices, each ficelle of delicious duck foie gras will serve about 30 canapés. Fully ready to eat, keep this in the fridge and serve.
Ingredients: Duck foie gras, duck fat, cream 15% (ilk, cream, carboxymethyl-celluose, guar gum, carob gum, mono and diglycerides, carrageenan), eggs, modified milk ingredients, Port wine, salt, sugar, spices, sodium erythorbate, sodium nitrite.
Storage: Keep refrigerated or frozen.
