About Our Premium Aged Cheeses

What is aged cheese?
These cheeses represent a very broad category as most cheeses are matured for at least a period of time. To narrow down the genre slightly, and make things more manageable most people consider a true example of the genre to be matured in a cave or cellar for at least 6 months or more. Sharper and firmer in texture than fresh cheese or young, mild varieties, they offer the most in terms of flavor. Offering up that concentrated umami taste that enlivens our dishes and makes our taste buds dance! Certain cheeses lend themselves particularly well to aging these include Gruyere, Manchego, Gouda, Parmesan-types like Parmigiano-Reggiano and Grana Padano, and perhaps most popular of all, aged cheddar cheese.

Health Benefits
Much easier on the digestive system thanks to their long aging period, the natural lactose in the milk is broken down. The longer the aging, the less lactose remains in the product, which means some aged cheeses can be enjoyed even by those who need to steer clear of dairy products. These cheeses are high in probiotics, beneficial enzymes, and a handful of essential nutrients like calcium, phosphorus, zinc, and vitamins.
