Mimolette - Aged 3 MonthsWith it's distinctive orange hue, Mimolette is a hard cave-aged French cheese that was developed to complete with the classic Dutch Gouda back in the 17th century. The particular color develops from a rub with Annatto. Aged for 3 months, this is considered a young Mimolette, and it develops a great nutty and mildly sharp flavor. Produced by Isigny Ste-Mere, a cooperative of farmers in Normandy, which has been producing it with delicious results since 1932.
Ingredients: Pasteurized cow's milk, cheese cultures, salt, enzymes, annatto, lysozyme.
