Mahon Reserva - 12 Months

An aged Mahon, Mahon Reserva is a very particular Spanish cheese. Intense and bold, with a sharp bite to it and a hard texture that breaks up easily (similar to Parmigiano). With caramel smoky flavors and hints of the paprika and oil used to rub it, you'll find this a highly complex cheese. Perfect to grate over pastas or vegetables, or eat on your own paired with a full-bodied wine like a Cab or a hearty beer.
Ingredients: Cow's milk, cheese culture, salt and rennet.

I wasn't familiar with this cheese, but I like it a lot! It reminds me a little of gruyere, with a nutty flavor and a slightly crumbly texture.

Always delicious. Eat it by itself or add to cheese board and hors d'oeuvres platter - everyone comments on the great flavor and texture...and you can eat the rind.

The colorful orange rind is edible and has a wonderful paprika flavor, which complements the main body of the cheese. I continue to order this cheese for my cheese platters.
