Wild Boar Salami

Because these stouthearted beasts are free-ranging, they enjoy a natural, varied diet of plants and berries, which imbues the meat with rustic flavors and lean consistency, completely setting it apart from domestic pork. The meat is minced and cured for 30 days with sea salt, garlic and black peppercorn in a natural pork casing, and hand-tied. The end product is a soft and savory luncheon meat you can use in a range of meals, snacks and appetizers, all of which will surprise and delight guests and family members.

Simply cut it into thin slices (a deli slicer is ideal for this, but a knife will also do), then apply it to antipasti, salads, risottos or sandwich fillings.
