The base cheese is a soft-ripened, bloomy-rind triple crème in the classic Brillat-Savarin tradition: rich with added cream, cultured slowly, and aged just long enough to develop a delicate white rind. Then comes the twist — a generous crown of candied papaya pieces pressed onto the exterior, turning a classic French cheese into a dessert-worthy centerpiece.
