Pears and Blue Cheese Tart Recipe

A great recipe for when pears are in season, we love how the intensity of the blue cheese is complemented and lightened by sweet and tart pears. Serve it as a light lunch paired with spring greens, or cut into small appetizer-sized pieces for a delicious hors d'ouevre that's easy to make.

Pears and Blue Cheese Tart Recipe Instructions

Ingredients
  • 4 pears, washed and cut into wedges (seeds removed)
  • 1 lemon, juiced
  • 2 tbsps. Butter
  • 1 tbsp. Olive oil
  • 2 sheets puff pastry
  • 7 oz. mascarpone cheese
  • 3 tbsp. Blue cheese, crumbled or chopped
  • ½ tsp. Black pepper
  • 1 egg
  • 9 oz. blue cheese
  • 3 tbsp. Toasted almonds, chopped
  • 1 egg yolk
  • 1 tbsp. Water
  • 3-4 tbsp. blond cane sugar

Directions
  1. Add two lemon halves to a small bowl of water. Cut the pears in wedges and keep them in the water bowl (this prevents darkening).
  2. Add butter and oil to a medium saucepan over medium heat. Sautee pears - both sides - for about 2/3 minutes and reserve to cool.
  3. Preheat oven at 375 °F.
  4. Arrange one sheet of puff pastry on a baking sheet.
  5. In a bowl mix the egg yolk with 1 tbsp of water, beating until just combine and brush onto puff pastry.
  6. With the other puff pastry sheet, cut into into strips about ½ inch wide. Create a border at edge of the bigger pastry sheet and brush again with the yolk. Note: If your pastry sheet is thin and the border isn’t at least ¼ inch tall, use extra strips to give the border some height.
  7. Mix mascarpone and blue cheese with pepper and the whole egg. Pour and and distribute evenly over the pastry sheet.
  8. Place the pears on top, and add the remaining blue cheese. Sprinkle with almonds and sugar.
  9. Bake 25 to 30 minutes, until the pastry is golden and the filling is firm.
