Hailing from the area of Lille (which gives this cheese its other common name, “Boulle de Lille”), near Flanders, this distinct bright orange cheese is a beloved French fromage, similar in many ways to traditional Dutch Edam, which probably served as the inspiration for this French version.
Mimolette is cow’s milk cheese, made with annatto seeds for that bright color, and it can be aged anywhere between 2 to 24 months. Like most hard cheeses, with age Mimolette gets crumblier and more intense, while a young Mimolette is firm and pleasantly mild. Our Mimolette from Fromage Marquis is aged for 12 months, for a hard texture that’s buttery and rich with a sweet, caramel butterscotch flavor that's intense but not overwhelming. It’s the perfect cheese to slice for sandwiches, tu cut into cubes for a cheese board, or to top a burger. It melts very nicely, so a Mimolette grilled cheese is definitely a dish to try!
