Parmigiano Reggiano

Buy parmigiano reggiano, and forget processed supermarket parmesan cheese; authentic Parmigiano Reggiano is a whole story altogether. Classified as DOP cheese, Parmigiano's methods of production are strictly controlled by a consortium. Traditionally, Parmigiano is used shaved over pastas and salads, or dipped into aged Aceto Balsamico. Dry and hard due to its extremely long aging, Parmigiano has a granular texture that easily breaks into slivers - irresistible to pop into the mouth.
Ingredients: Cow's Milk, Salt, Rennet.

Disappointed in its packaging. Looks like the same stuff I can buy at my local market. Tastes pretty similar, too. I expected something that was recently cut off a wheel.

Q: How long will a 10-lb, 1/8 wheel portion keep?
A: Properly stored is can keep for up to 12 months or a bit longer. Best way to store is by cutting the wheel into portions no larger than 1/2 pound each, and wrap tightly in heavy-duty aluminum foil or plastic freezer wrap, or place inside a heavy-duty freezer bag.

Q: say yes you can have the rind, whole
A: Yes, the rind on the Parmigiano Reggiano is edible.

Q: Can I get wedges of cheese with the rind attached
A: The rind is not removed from the cut portions.

Q: How long is it aged and who makes this parmesan, what brand and finally is it pre-packaged or do u cut and vacuum seal it
A: The Parmigiano Reggiano is aged for 24 months. It is made in Italy by Emilia. The cut portion is cut in our warehouse, the other sizes are pre-cut and pre-packaged. The cheese is vacuum sealed.
