Pecorino Toscano Stagionato DOP

Pecorino is a semi-hard table or grating cheese produced in Tuscany, Italy, exclusively from sheep's milk. It has a yellowish rind with a very firm pate, and a flavor that is fragrant and savory. This superb cheese is protected by the DOP, a mark of protected origin.
Ingredients: Pasteurized sheep's milk, rennet, salt. Rind rubbed with olive oil.
Storage: refrigerated
Availability: Usually ships within 1 business days. Product is perishable and must ship via Overnight service.

Q: I am lactose intolerant and can only eat aged hard cheese or cheese with cultures added. Does your Pecorino qualify?
A: Due to its aging process (of minimum 120 days) the Pecorino Toscano Stagionato DOP has no appreciable lactose content. A recent study showed that while there is a higher lactose content in fresh pecorino, it is absent from cheeses aged for more than four months.

Q: Ingredient list and How long aged.
A: The ingredients are: pasteurized sheep's milk, salt, rennet, lactic ferments. The cheese is aged for a minimum of 120 days.

Q: Does the sheep cheese get stuck to the bottom of dish like parmigiana?
A: This is a hard cheese so it will behave similarly to the Parmigiano cheese.
