Q:I am lactose intolerant and can only eat aged hard cheese or cheese with cultures added. Does your Pecorino qualify?
A:Due to its aging process (of minimum 120 days) the Pecorino Toscano Stagionato DOP has no appreciable lactose content. A recent study showed that while there is a higher lactose content in fresh pecorino, it is absent from cheeses aged for more than four months.
Q:Ingredient list and How long aged.
A:The ingredients are: pasteurized sheep's milk, salt, rennet, lactic ferments. The cheese is aged for a minimum of 120 days.
Q:Does the sheep cheese get stuck to the bottom of dish like parmigiana?
A:This is a hard cheese so it will behave similarly to the Parmigiano cheese.
