In the winter months, we source out the fresh white truffles and winter black melanosporum truffles, making sure we only start selling them when the quality of these mushrooms is impeccable. During the summer, summer truffles arrive. Although less pungent than the winter variety, these are a great option to serve during the summer months, giving your warm-weather menu a luxurious upgrade.
Truffle seasons are divided into winter and summer, but this is not a calendar-type situation but rather a weather thing. An early start to cold temperature means an early winter season, which typically runs as early as September and as late as March. Whites are usually available earlier and their season ends earlier, while black winter truffles start arriving in November. The summer truffle season runs from late March through August.

With all fresh truffle products, you are charged based on the actual weight shipped. Once your order is weighed, your charge is updated to reflect the exact weight and price of your order. That way when you buy fresh truffles, you are never overcharged.

A:About 3-7 days, depending on storage.

A:We do not recommend freezing at home as this can damage the texture and flavor.
Q:How do you store fresh truffles?
A:Wrap tightly in paper towels, then place inside an airtight container in the refrigerator. Change the paper towel every day, and they should last about a week, sometimes even longer. If you prefer to freeze them, you can keep them frozen for up to 3-6 months.
Q:How much (in oz) should you order per serving in a dish?
A:Approximately 0.2-0.3 oz per serving.
