Its outstanding taste includes hazelnut, herb and a fruity flavor that is irresistible. Brie de Meaux has the AOC approval as an elite cheese. Brie de Meaux is arguably the most popular out of France's 400+ cheeses. This first class cheese matures for 2 months before it is ready for sale.

This is NOT "Brie de Meaux." It cannot labeled Brie under French law, because it is pasteurized. This cheese comes in two versions: This one is actually "Fromage de Meaux" (and so labeled on the box and the wrapper) which is the pasteurized version of the traditional Brie de Meaux. Both are nice cheeses, but the Brie de Meaux has a stronger flavor than the Fromage, by virtue of the fact that by US law it cannot be imported unless is has been aged (as I recall) for at least three months. (Note: It is not true that unpasteurized cheese cannot be imported into the US!) The bottom line is this: Yes, you can get away with calling it Brie in the US, but you cannot get away with that subterfuge in France. A nice cheese, yes, and the Brie version is worth five stars. As the cheaper, less flavorful pasteurized version, this Fromage de Meaux is necessarily less deserving, so I give it four stars. Incidentally, I thought I was buying Brie de Meaux when I placed my order. While I (and my friends) enjoyed it, I was sorely disappointed. I have had real Brie de Meaux on numerous occasions, and there is no mistaking the difference. UPDATE: My rating still stands. It's a nice Fromage de Meaux, but it is NOT Brie. Why don't you simply be honest about it? It's a nice cheese at a fair (but certainly not great, considering that you're selling it in wholesale quantities) price, so I doubt you would lose any sales, and would points with genuine conneisseurs of fine French cheese--like me.

Eaten ripe and at room temperature, this cheese is incredible. It is nutty, buttery, soft, and simply has more taste than any pasteurized brie I know. Properly wrapped in plastic, it will keep for many weeks in the refrigerator.

A:The cheese is shipped out Overnight, with ice/gel packs. The cheese should be kept refrigerated, wrapped in cheese paper (wax paper), in its original container. The shelf life of the cheese is 2-4 weeks, depending on how it is stored.
