Aceto Balsamico or Balsamic Vinegar, is a protected denomination - much like a copyright. This means that only a few suppliers have earned the right to that label, and authentic Aceto Balsamico must come from one of two different regions in Italy: Modena or Reggio Emilia. From that, a cornucopia of flavors may arise, with one similarity: all of them grow finer as they age, as a fine Italian wine.
