Goat Cheese On Green Pea Blinis Recipe

A colorful and flavorful homemade blini tower filled with chevre cheese. Get those peas out of the freezer and make something delicious and sophisticated! The blinis - Russian-style mini pancakes - can be used to serve almost any cheese. Make mini versions for caviar too!

Goat Cheese On Green Pea Blinis Recipe

Ingredients
  • 1 ¼ cups frozen green peas
  • 1 medium egg
  • 1 medium egg yolk
  • ½ cup milk
  • 4 tbsp. all-purpose flour
  • 4 tbsp. butter, melted + 1 tbsp. to coat pancake maker
  • Salt and pepper, to taste
  • ½ lb. cherry tomatoes, sliced thinly
  • 2 garlic cloves, sliced thinly
  • 2 tbsp. olive oil
  • 3 tbsp. honey
  • 7 oz. firm goat cheese, cubed
  • 5.3 oz. button mushrooms
  • Juice of ½ lemon
  • 2 tbsp. chopped chives

Directions
  1. In a large saucepan, cover the pea with water and 1 tsp salt and boil until al dente. Immediately rinse under cold water so color won't bleed out.
  2. Place the peas, egg and eggs yolk, milk, flour and melted butter, and process in a food processor until you get a smooth and consistent "batter". Cover and take to the fridge for 20 minutes to cool.
  3. Melt 1 tbsp. butter on a griddle and pour ¼ cup of batter. Cook until golden, flip, and cook the other side. Remove and reserve. Make 12.
  4. Heat oven to 375 °F.
  5. Place the cherry tomatoes and garlic on a roasting pan and drizzle with 1 tbsp. each of olive oil and honey. Bake 15 to 20 minutes and reserve.
  6. Sauté diced mushrooms in a large pan with 1 tablespoon of olive oil. Toss with salt, pepper, lemon juice and chive
  7. Assemble your tower: place four blini on a non-stick baking sheet at least 1 inch apart . Cover with mushrooms, top with a second blini, add the roasted tomatoes and goat cheese mix, finish with a third blini.
  8. Bake 5-8 minutes, until goat cheese is warmed, garnish with sage and serve.
