One of the ultimate delicacies in the culinary world, Spain's Iberico ham has taken the food world by storm ever since it arrived to America, although it's been enjoyed in Spain for hundreds of years. Cinco Jotas raises exclusively 100% pure breed Iberico pigs, and has been doing so since 1878. The large, fat hogs with their characteristic black hoofs (known as pata negra), have a privileged genetic profile that delivers a fattier, sweeter meat than any other. They're raised in a protected area of Spain, the Jabugo Dehesa, a pristine woodland filled with oak trees, where the pigs are allowed to graze freely and get their fill of delicious acorns (bellotas). Later going on to a time-honored, carefully supervised curing and salting process at Cinco Jotas, the result is a ham that is mouthwateringly oily, sweet and unlike any other. This hefty ham comes from the hind leg, with the bone in.
