Crottin Maitre Seguin
One of our most traditional goat's milk cheeses, Crottin de Maitre Seguin (Master Seguin's Crottin) is one of the staple cheese-platter selections. Very similar to Crottin de Chavignol and Chabichou or Chabis, it is a delicate and sweet, with a soft, even texture - the cheese is uncooked and unpressed. The flavor is pungent, but not overpowering. Traditionally paired with a not-to-sweet but fruity white wine like a Sancerre.

Q: how long will this last uncut in the fridge and or can it frozen
A: The Crottin cheese is a "living cheese", meaning that long as it does not get too cold (below 4-degrees Celsius) the mold in the rind will continue to work on the cheese. The riper the cheese gets, the softer and more flavorful it becomes. We would recommend using it within around 2-3 weeks from receiving it.
We do not recommend freezing it, as this can damage the texture of the cheese.
