Caprifeuille Saint Maure
An absolutely wonderful goat's milk cheese from France, Caprifeuille is young and mild. Aged about ten days, this mild goat cheese from France is old enough to endow it with a slight acid taste but young enough to be subtle. It is covered with a dusty white, chalky rind, a product of the extended aging period. The granulose rind of Caprifeuille is perfectly edible (we find it deliciously mild), but is easily removable with a sharp knife for those who prefer this Saint Maure cheese that way. The stark white inside is a gracious surprise: delicate and smooth. It is attractively wrapped in a flexible enclosure, shaped like a log (or buche).
