Fresh Black Burgundy Truffles from France - Tuber Uncinatum

The Autumn truffle, or Tuber uncinatum, is also called the Burgundy truffle, and is hunted from October through January in Italy. It grown on the roots of oaks, poplars and pine trees, deep within the soil. Flavor and odor wise, it falls right in between a summer and winter truffle, with a nice intensity that’s not overpowering. It has hints a nice earthy aroma, with hints of hazelnuts.

Instructions for use and storage: Don't cook for long periods of time or over excessive heat. Shave over dishes at the end of the preparation or when plating. The heat from your dish will bring out the aroma and flavor of the truffle. Store in the refrigerator wrapped in a paper towel.
