Fresh Black Winter Truffles from Italy, First Choice
Fresh Italian Black Winter Truffles from Norcia, Tuber Melanosporum Vitt, are a prized delicacy, a great ingredient to create high flavored luxurious dishes.
"First Choice" is the denomination used for black truffles with a more irregular, less rounded shape. Presentation-wise, you won't get those round slices that are best for shaving at the table, but you get the same flavor and aroma of Extra Choice truffles, at a more inexpensive price. These are the best for when you'll be using the black truffles in the dish, grated on a sauce or soup, casserole or pasta dish.
Instructions for use and storage: Fresh black truffles are great to use in cooked dishes, but don't cook for long periods of time or over excessive heat. The heat from your dish will bring out the aroma and flavor of the truffle. Store in the refrigerator wrapped in a paper towel, inside a plastic bag partially closed.
