Fresh Black Burgundy Truffles from Italy
Available from September through January (depending on the weather), and for a short season during March and April. Known as the Burgundy or Autumn truffle - Tuber uncinatum - is a wonderful black truffle has a dark brown to tan veined interior and is famous across Europe for a mild and delicate flavor with hazelnut notes and a light aroma. We source our fresh Burgundy truffles from Italy, where they're hand-picked by our truffle pickers.
Instructions for use and storage: Don't cook for long periods of time or over excessive heat. Shave over dishes at the end of the preparation or when plating. The heat from your dish will bring out the aroma and flavor of the truffle. Store in the refrigerator wrapped in a paper towel.

Orders for fresh truffles placed with a requested future delivery date, will be charged based on the prevailing price for the week the truffles ship. A:Once delivered, a fresh truffle will only keep for up to 5 days. You can tell they have gone bad if the truffle if it's moist, looks rotten or completely lose aroma.

A:We do not recommend freezing fresh truffles as this can damage the texture and flavor.
