More than two decades ago, entrepreneur foodies in Australia discovered that the fertile soils and plentiful trees were the ideal conditions for growing truffles. Taking spores from the Perigord truffle of France, they “planted” truffle in the Tasmanian soil, and their efforts paid off, with Australian Perigord Black truffles filling the seasonal gap – fresh winter truffles, all season long!
