  • 4 large potatoes, peel and diced
  • ½ large sweet onion, diced
  • 1 large tomato, sliced
  • ½ green pepper
  • 1 bunch parsley, chopped finely
  • 3 tbsp. butter
  • 3 tbsp. olive oil
  • 1 tsp. paprika
  • 8 oz. Wagyu Corned Beef, chopped
  • 1/3 cup tomato sauce
  • 4 eggs
  • Salt and pepper, to taste

Directions
  1. Boil the potatoes until soft, drain and reserve.
  2. Bring the olive oil and butter on a large pan to a medium head and add the onions. Saute the onions until slightly tender
  3. Add in the green pepper and the parsley, give it a stir and cook, covered, for about 2 minutes. Remove from heat and reserve warm.
  4. To the already hot pan, add in the potatoes, the corned beef, and season with salt, pepper and paprika to tastes, sauté and then add the tomato sauce, and cook on medium-high for about 5 minutes.
  5. Fry 4 eggs in a separate frying pan.
  6. Assemble: place the hash on a plate and top with a fried egg, a few slices of tomatoes, a garnish with a pinch of fresh parsley.
