Coppa pork is the meaty topmost portion of a pig’s shoulder, located just behind its head. Highly valued for its tasty layers of fat, in Italy and other parts of Europe it’s widely available in grocery stores and supermarkets, with buyers braising or roasting it as “coppa fresca,” In the US, however, it can be somewhat difficult to get hold of good quality coppa pork meat. Fortunately, we can deliver our coppa cured pork shoulder direct to your home, providing a rare treat that will impress both you and your guests. The meat has been cured in salt for 75 days and seasoned with red wine and other flavorings, giving it a firm texture and aromatic spiciness.
Slice it into thin slices and serve it with other cured meats as part of a luxurious salami platter. Alternatively, serve it as a traditional antipasto along with French bread or Italian breadsticks, or incorporate it into a yummy sandwich.
Our coppa cured pork shoulder was prepared by Optimus Inc, as part of their Terroirs d’Antan (meaning “Soils of Yesteryear”) brand. They specialize in the masterful preparation and distribution of gourmet foods such as meat, fish, jams, sauces, oils and dairy products.
