Smoking Goose’s spruce tip bresaola is made from beef eye of round that is carefully cured and seasoned with black peppercorns and hand-foraged spruce tips. Traditionally used in Scandinavian cooking, spruce tips bring a bright, aromatic flavor with notes of citrus, pine, and fresh herbs that cut beautifully through the richness of the beef. The result is a bresaola with a clean, savory depth and an especially fresh finish that sets it apart from more traditional cured beef preparations.
Thinly sliced, it’s ideal for charcuterie boards or simple composed dishes.
