Tomme de Savoie is a semi-hard cow's milk cheese from the ancient mountains of the Savoie, France. Made in winter, it has a rough, almost bark-like rind that evokes its rustic origins, but the the pale yellow cheese inside is smooth and springy, and punctuated with small holes. Its mild, earthy flavor has hints of alpine flowers, milk and walnuts. Pair with medium-bodied red wines, or with cured meats, fruits, crackers or bread.
