Undoubtedly the most popular of Spanish cheeses, Manchego is a protected origin cheese made of Manchega sheep's milk that can only be produced in the region of La Mancha - yes, the same region where Don Quixote and his portly companion Sancho Panza chased their windmills. El Piconero's aged Manchego is a firm cheese that's aged for at least 12 months - the most they aged their Manchego - developing a more profound flavor than it's younger 3 and 6-month old counterparts. Buttery and oily, sharp and savory, this is a great cheese for the cheese board, or to pair with buttery Serrano ham, a drizzle of olive oil and some plump Spanish nuts.
