Pecan Bars Recipe

Just one bite into these addictive, crunchy and buttery pecan bars and we guarantee you won't be able to stop at just one. Absolutely delicious and incredibly easy to make, you can make these for any occasion - we love them with our afternoon break coffee.

Pecan Bars Recipe

For the dough:
  • ¾ cup unsalted butter at room temperature
  • ¾ cup powdered sugar
  • 1 and ½ cups self raising flour

For the topping:
  • 2 big eggs
  • 1 cup Muscovado or brown sugar pressed in the cup with the back of a spoon
  • 2 tablespoons self-raising flour
  • ½ teaspoon salt
  • 1 tsp. vanilla extract
  • 1 and ¼ cups chopped pecan nuts

Directions
  1. In a food processor mix the butter with the sugar. When the mix turns creamy, add the flour and mix until it separates from the walls of the processor bowl.
  2. Remove from the processor and transfer to the baking pan, pressing the dough with your fingers or a small rolling pin into the bottom.
  3. Bake for 15 minutes until dough is dry and turns lightly golden.
  4. In a bowl mix the topping ingredients: eggs, sugar, flour, salt, vanilla and pecans, until well combined.
  5. Pour over the cooked dough and bake for another 20 minutes until firm. Remove from the oven, unmold and let it cool on a rack.
  6. Cut into bars and serve.
