Pecan Bars RecipeFor the dough:¾ cup unsalted butter at room temperature¾ cup powdered sugar1 and ½ cups self raising flourFor the topping:2 big eggs1 cup Muscovado or brown sugar pressed in the cup with the back of a spoon2 tablespoons self-raising flour½ teaspoon salt1 tsp. vanilla extract1 and ¼ cups chopped pecan nutsDirectionsIn a food processor mix the butter with the sugar. When the mix turns creamy, add the flour and mix until it separates from the walls of the processor bowl.Remove from the processor and transfer to the baking pan, pressing the dough with your fingers or a small rolling pin into the bottom.Bake for 15 minutes until dough is dry and turns lightly golden.In a bowl mix the topping ingredients: eggs, sugar, flour, salt, vanilla and pecans, until well combined.Pour over the cooked dough and bake for another 20 minutes until firm.
