White Sturgeon, known for their caviar as Osetra, has a great firm texture that is just perfect for smoking, turning into large, delicious flakes full of deep smoky flavor. The sturgeon is cured with salt and sugar, and then hot-smoked over natural woods, for a sweet, deeply rich flavor that is wonderful in any dish.
Serve our smoked sturgeon in a salad, tossed with pasta, or served with crème fraiche over toast as an appetizer. Serve it as a main course alongside a rich sauce and roasted potatoes. Chop it up and blend with cream cheese for a sumptuous spread or dip, or just savor it on a simple yet incredibly delicious sandwich. A great addition to a cheese board or charcuterie platter, this is a must-have delicacy.
Markys Caviar has been specializing in caviar since 1983, and no longer satisfied with just importing and distributing, in 2003 they decided to found Sturgeon Aquafarms, taking all their expertise and turning it into raising and harvesting their own sturgeon in state-of-the-art facilities in Northwest Florida. Using Beluga, Osetra and Sevruga broodstock, and waiting patiently until they matured, they’re now one of the new powerhouses of domestic caviar and sturgeon meat in the country.
