American Black Bowfin Caviar - Malossol

The eggs of Black American caviar come from the Bowfin, which is also known as Chourpique or Cajun Caviar in parts of the American South. It is an ancient species of fish, and the roe is brownish to jet black in color, very firm, and has a mildly tangy and earthy flavor.

A: The shelf life of the unopened caviar is approximately 2 weeks, kept refrigerated at about 26 to 39 degrees Fahrenheit (-1°C -+4°C) - it can be kept in the coldest part or the refrigerator (the back of the lowest shelf).
