Made by the crafty folks over at Hudson Valley Farms in New York, this duck liver is a top-notch product. They raise, process and package their Moulard duck products in upstate New York, in one location, strictly supervised. This velvety, smooth, flawless lobe is perfectly suited for any foie gras preparation. Fresh, never frozen.

Almost perfect. It was half thawed when I arrived home, but that wasn't the problem. When I removed it from the packet I detected a strong odor of spoiled meat. However I rinsed it under cold water and rubbed it gently. This removed the off odor. I the placed it in the freezer to firm it up, then when firm I cut it into 6 ounce packets and vacuum sealed them, then placed them in the freezer. I tried one packet the next day, and it was fabulous. The texture is definitely Grade A. If it weren't for the initial "off smell," I would have awarded 5 stars. Yes I will definitely order again!

Q: Has this been "cleaned" of nerves/vessels/grizzle? Is it ready to just slice and sear or is any prep work required?

The lobe is intact, with the veins not removed so prep work will be required.
