You enjoyed it so much that now you MUST have the whole thing? We understand. That's why we are now selling the entire Iberico pork shoulder of the famed pata negra Iberian hogs. These pigs range freely, eating a diet of acorns (bellotas), transforming their meat into healthy and delicious ham, full of monosaturated fats. The paleta Iberica de bellota is carefully cured and salted, and ready to be sliced and enjoyed for many months.

I wish they would state that 1-1.5 lbs of the ham they send is pure fat. One side of the piece they sent me has 10-20% of a thick lawyer of fat. I was not happy with this.
