Literally “monk's head”, it carries this name both because of its shape and because it originated in the Monastery of Bellelay (which is why this cheese is also known as Bellelay) in the Jura Mountains of Switzerland. It has been said to evoke a combination of flavors, including nutty, beefy, and fruity; you'll have to taste it and be the judge. Its strong flavor and aroma can be overwhelming, so this cheese may be best enjoyed sliced very thinly or shaved over salads and other dishes.
