Tete De Moine

For the consumer who likes a spicy cheese Tete de Moine is the cheese for them. Literally “monk's head”, it carries this name both because of its shape and because it originated in the Monastery of Bellelay (which is why this cheese is also known as Bellelay) in the Jura Mountains of Switzerland. It has been said to evoke a combination of flavors, including nutty, beefy, and fruity; you'll have to taste it and be the judge. Its strong flavor and aroma can be overwhelming, so this cheese may be best enjoyed sliced very thinly or shaved over salads and other dishes.

it is perfect.I just wish you would inclose a note reminding us older people to take the cheese out of the fridg to let it warm up a little in order to make vice flowers.

A: The shelf life of this cheese is 60-90 days kept refrigerated, under a cheese cover to preserve the humidity. If no cheese cover is available, you may wrap it in plastic film and put it into the fridge where the cheese may be stored for several weeks.
