Classic Lemon Bars Recipe

One of our most beloved treats, sunny and sweet lemon bars are a delight to eat and serve. The bright color reminds us of a sunny day, while the tangy and citrusy flavor really brightens up our mood.

Classic Lemon Bars Recipe

Ingredients for crust
  • ½ cup cold butter, diced
  • 1 ¾ cups plain flour
  • ¾ cups powdered sugar
  • 3 tbsp. water

Ingredients for filling
  • 4 medium lemons, zested
  • 3 eggs + 1 egg yolk
  • 1 cup white sugar
  • 1.5 oz. flour
  • ¼ cup powdered sugar, for dusting

Directions
  1. Heat oven to 375 °F.
  2. Line a 9-inch square baking pan with parchment paper, making sure to leave at last 1 or 2 inches overlap.
  3. In a food processor, pulse the butter, sugar, and flour until you get the consistency of fine crumbs. Add the water and work with your hands until incorporated. Press into the bottom of your pan, making sure to also cover the sides so the lemon filling doesn't slide under. Use the back of a spoon or rolling pin to press it down.
  4. Bake at 375F for about 15-20 minutes, until lightly browned.
  5. Set aside to cool.
  6. For the filling, zest the 4 lemons finely, and mix with white sugar and flour in a bowl.
  7. Juice one lemon and mix with eggs and a yolk.
  8. Using a wire sieve, add the egg mixture into flour mix and whisk until well combines.
  9. Turn down oven to 350 °F.
  10. Pour the lemon filling onto the crust and bake for about 20-22 minutes, until the filling is just set.
  11. Cool in the pan outside the oven, then refrigerate until fully cooled.
  12. Remove from the pan, sift powdered sugar, cut into bars.
