Wild Boar Bratwursts

Our Wild Boar Bratwursts are sourced from Texas feral swine raised on pastures just outside San Antonio. With a natural diet of nuts, fruits, berries and herbs, their meat is sweet and nutty rather than gamey, making it the perfect flavor base for a tasty gourmet sausage.

Popped into a hotdog bun and topped with mustard and sauerkraut, these might just be the surprise showstoppers at your next summer grill party. But they're also just as delicious in winter, ready for a quick pan-sear in red wine sauce alongside heirloom vegetables. Alternatively, chop them up and incorporate into casseroles, cassoulets, paellas and jambalayas as a lean substitute for regular pork sausage.
