What are Sweetbreads?
Sweetbreads, despite their misleading moniker, are neither bread nor very sweet. Organ meat sourced from the thymus gland sweetbreads can be anything from the liver or pancreas to the heart, as is the case with these jumbo heart sweetbreads. Mild and creamy in texture, it is rumored that their name comes from the subtle sweetness they possess. More sweet than savory the name has stuck through the ages, confusing but never disappointing the uninitiated eater.
