Reggianito

Anyone who's been to Argentina will know how rich it is in European influences, and when Italian immigrants migrated there during the 19th and 20th centuries, they brought an array of local culinary traditions, including cheese-making. Homesick for their beloved Parmigiano-Reggiano, the Italians made their own batches of the cheese, often in much smaller wheels (around 15 pounds) than the European variety, thus giving it the Spanish diminuitive name "Reggianito" or "Little Reggiano." Reggianito is also aged for only 5-6 months, compared with Parmigiano's longer 12-36 month aging cycle. As a result, this hard, cow's milk cheese has some slight differences to its Italian counterpart, with a more granular texture and saltier flavor, for example. But just like its forefather, Reggianito is an exemplary ally in the kitchen, ideal for grating over pastas, vegetables and meats, or for adding to cheese plates and appetizers. Either way, its robust flavor and economical price make it just as much a "King of Cheeses" as its Italian parent.
