Red Velvet Truffles Recipe

Ingredients
  • 9×13 inch pan of Red Velvet Cake, baked and cooled
  • 8 oz. Mascarpone cream cheese + 2 tbsp.
  • 1 lb. white baking chocolate chips
  • Red colored sugar, as needed to decorate (optional)

Directions
  1. First, prepare a Red Velvet Cake (you can use our great Red Velvet Cake Recipe), cool and crumble the cake into pieces, on a bowl. Fold the mascarpone cheese, then mix until combined. You want the mix to be soft, so add more cheese if the mix needs it. Form the truffles by scooping out about a tablespoon of the mix, then place over a baking tray or plate lined with wax paper. Take to the freezer for at least 3 hours until firm and cold.
  2. When they're ready, take them out and leave at room temperature for 10 minutes. In a microwave, melt the white chocolate. Dip each truffle, using a fork or spoon, letting excess drip off, then set them back into the tray. Sprinkle with sugar and serve.
