Ricotta Salata

Most people know ricotta cheese, a soft, curdly Italian cheese that resembles cottage cheese. Ricotta Salata however, is something different and we think, altogether more delicious. It’s more of an aged version of regular ricotta, and like the name implies, it’s salty – “salata”. While ricotta is almost sweet, ricotta salata is salty, and where ricotta is soft and liquidy, salata is dry and firm, buttery but crumbly. It can easily be shaved or grated, which makes ricotta salata a great option for pasta, risotto or salads, as an alternative to parmigiano or pecorino. It’s mild enough to play well with other ingredients without overwhelming a dish, and is at home with pasta, rice, fresh produce, meats, chicken, you name it, you can add ricotta salata and it will take more delicious.

This is a very flavorful cheese. Reminds me of childhood Easter when this cheese was never missing from the table. It needs just a bit more salt.
