The sirloin boasts the best of both worlds, and the top sirloin, which gets even less use than the bottom, has a tender quality that rivals that of much more expensive cuts of meat.
In general, the sirloin makes a great compromise between taste and texture, but there are differences in terms of tenderness when it comes to the top and bottom cuts. The top is geographically closer to the loin and boasts a velvety texture that is very similar to that highly coveted cut. The lower portion, on the other hand, contains several muscles, each with varying degrees of tenderness, making it not only less uniform but, on the whole, less tender than the upper section.
