Discover one of Spain’s finest Manchego cheeses: Manchego DOP Don Cayo Viejo Gran Reserva. Cured for 9 to 12 months, it is rich and complex in flavor, with a nutty undertone and a firm, almost flaky texture. Its warm, nutty flavor is packed with hints of herbs and grasses of the extensive estate where the sheep roam.
Don Cayo uses only milk from the pure bred Manchega sheep. Everything that the sheep eat on the estate is either wild forage or grown on the property. This impressive Manchego bears the Queso Manchego Denomination of Origin seal, meaning that quality and authenticity is guaranteed with each wheel.
This sharp cheese is best cut thinly and served at room temperature – particularly with a cube of quince to cut through its tangy bite and a glass of a full-bodied red, like a spicy Rioja. Create a Spanish-themed charcuterie by serving this bold Manchego with some Serrano ham, dry cured olives, roasted red peppers and some crusty, fresh baguette – and then enjoy leftovers in a sandwich.
