A fresh appetizer recipe that will cool you right down! Crunchy little cucumber slices act as vessels for the smoked salmon and Boursin cheese dip, and are a one-bite-wonder. Perfect to serve as an elegant hors d'oeuvre for a summer party, or perfectly dainty bridal shower starter.

Cucumber and Smoked Salmon Appetizer Canapes Recipe

Ingredients

Directions
  1. Peel the cucumber and cut the top off, horizontally. Remove the seeds.
  2. Cut the Scottish smoked salmon in very small strips and add to a medium bowl with the boursin cheese, mixing until well blended.
  3. Fill up the hollowed out cucumber with the mix, up to the very top, pressing well. Cut the cucumber in 1 inch pieces – to make it bite-sized, and serve or refrigerate until serving.
