About Soft Cheese

Soft cheeses are generally young, fresh cheeses that are creamy and easily spread. They have a lot of moisture from water and butterfat in them – this is because as time passes, cheeses slowly lose moisture which turns them hard, which is why soft cheeses are typically eaten while young, generally after a month or so from their production. Typically, the softer the cheese, the younger it is.

Types of Soft Cheese

There is no “one type” of soft cheese, but rather like a blank canvas, cheesemakers put their own twist to these delicious cheeses.

Soft goat cheeses

These can be made from basically any type of milk, like cow, goat or sheep, or a combination of two or even three. Soft goat cheeses include classic choices like buchette, valencay, and all crottin chevres. More unique choices made in America include Cypress Grove’s Purple Haze and Truffle Tremor.
