Fresh Black Summer Truffles from Italy

Fresh each week from Italy! Subtler than their winter counterpart, fresh summer truffles are harvested from May through August, depending on the weather and the season. They add to dishes an aroma and flavor that marries well with other ingredients, but are not overpowering and pungent like many winter truffles can be. You can buy our fresh summer truffles online at prices that are much more accessible than those harvested in the winter, which makes them great to experiment with truffle dishes without fear of making (costly) mistakes.

Per Piece Sizes Run As Follows: 
  • Small Size: 0.7 - 1.0 oz each
  • Medium Size: 1.0 - 2.0 oz each

Instructions for use and storage: Don't cook for long periods of time or over excessive heat. Shave over dishes at the end of the preparation or when plating. The heat from your dish will bring out the aroma and flavor of the truffle. Store in the refrigerator wrapped in a paper towel.

Availability Details: Fresh truffles are delivered to us twice weekly from Italy. Prices listed can only be guaranteed for orders shipped out ASAP. Prices can update each week. Orders for fresh truffles placed with a requested future delivery date, will be charged based on the prevailing price for the week the truffles ship. With all fresh truffle products you are charged based on the actual weight shipped.

Q:How many oz. needed for light shaving over small amount of pasta as appetizer? 7-8 portions. Thank you,
A:We would recommend to go with around 2 oz, as Black Summer Truffles tend to be milder in taste than their winter counterpart.

A:We recommend you shave around 2 oz.
Q:How can I store unused fresh truffles? I heard that they can be stored in the freezer. If so, how does that affect its flavor and its shelf life and usage ?
A:

We do not recommend freezing the truffles unless you have a lot of experience with truffles and preserving them. Fresh truffles should be used as soon as possible upon receipt. They can be stored in the refrigerator in an air-tight container for up to 3-4 days, as after that they would have little to no aroma left.

If you prefer to freeze them, you can keep them frozen for up to 3-6 months. Freezing the truffles will lead to some of the flavor being lost.

Q:can I use these by putting a whole truffle into my favorite olive oil to create my own truffle flavored oil?
A:Yes, you can use these to make truffle oil, but be aware their flavor is more subtle than the winter variety. Be sure to drain off all liquid from the truffle, and slice it as thinly as possible, so that it releases more of its flavor. Place the slices in olive oil or vinegar or even butter, and store in the refrigerator or a cool, dark place.
Q:What is the difference between small and medium in the item description? I would assume the description is referring to the size of the truffles, but I wanted to be sure. If it is in fact size, can you please quantify what "small" and "medium" mean in terms of circumference? Also, what is the variance scale in your grading (assuming the reference is in fact size?)
A:

Truffles are graded by their size: larger truffles are considered better and they are more rare and thus more expensive. The small and medium size do refer to the actual truffles size. Per piece sizes typically run as follows: 0.7 - 1.0 oz each for the small size, 1.0 - 2.0 oz each for the medium size.

Q:Heard that winter truffles have more flavor, is that true?
A:

Q:Are the summer truffles pre-washed or do you need to wash them after receiving them?
A:The truffles are cleaned but they still need to be washed before usage.
