A classic steakhouse cut with the phenomenal, meaty flavor of Wagyu beef, this thick this Bone-In Strip Loin is cut from the Short Loin of the steer. Also known as Top Loin or New York Strip Steak, it has a Marble Score of 3, meaning it contains lots of webbed fat throughout.
Incredibly tender, this whole cut has a thick cap of meat on top, which boosts the rich flavor even more. The average weight is 25 lbs which you can cook whole or cut down into steaks of your preferred thickness. We cut to order at ¾ inch, 1inch, 1 ¼ inches, 1 ½ inches, 1 ¾ inches, and 2 in. Since the short loin is uneven muscle, we do our best to get as close to your thickness as possible.
Make a beautiful roast by rubbing herbs into the flesh and cooking to a perfect medium rare. Don't over cook, as the marbling will burn off and result in a dry cut of meat. We also love this on the grill or pan-seared. Because of the high fat content, watch for flare ups on the grill.
