Our Wagyu beef is sourced from Australia’s Greg Norman, from prized Japanese Kobe breeds that are coveted for their natural sublime marbling – a webbing of fine intramuscular fat that renders the meat buttery soft and incredibly flavorful. They’re scored 4 in the 1 to 12 Marble Score scale, which means a good amount of flavor and a melt-in-your-mouth tenderness. Greg Norman’s Wagyu cattle are pasture-raised for 18 months, then finished with a special Japanese formulation of grain for 360 days.
