Wagyu Beef Blue Cheese Sliders Recipe

Our gourmet version of the classic bar sliders are made with sumptuous Australian Wagyu beef. Superbly marbled, the flavor is butter and the texture is to die for. The beef is mixed with onions and parsley for even more flavor, and topped with crumbled blue cheese, caramelized onion and tasty bacon.

Wagyu Beef Blue Cheese Sliders Recipe

For the Sliders
  • 1½ lbs. ground Wagyu beef
  • 1 medium white onion, finely chopped
  • 1 tbsp. chopped parsley
  • 1 tbsp. olive oil
  • 12 small buns
  • salt and pepper to taste

For the Toppings
  • 2 oz. blue cheese, crumbled
  • 8 cherry tomatoes
  • ½ white onion , sliced
  • ½ tbsp. olive oil
  • 1 tsp. sugar
  • 1 tsp. vinegar
  • 4 crispy smoked bacon slices
  • 4 tbsp. mayonnaise
  • A bunch of small parsley leaves

Directions
  1. Using a wooden spoon or spatula, mix the ground meat in a bowl with chopped onion, parsley and 1 table spoon olive oil. Season with salt and pepper to taste.
  2. Knead the mix with your hands for one minute. This will help achieve great texture.
  3. Divide the mixture in 12 parts, of about 2 oz each. Shape them into discs burgers and place them on a tray on top of parchment paper. Freeze the tray for half an hour prior to cooking.
  4. Start you grill and once it’s hot, cook the burgers 3 to 5 minutes on each side, until desired doneness.
  5. Halve the cherry tomatoes and sauté in a pan with ½ tbsps. olive oil. Set aside.
  6. Slice the ½ white onion and caramelize in a pan with olive oil, sugar and vinegar. Set aside for later.
  7. Mix the mayo with the parsley.
