Balsamic Vinegar Of Modena Affinato Beige Seal - Over 50 Years Old
Like a fine aged whisky or wine, Balsamic growths more valuable as it ages; this one is like liquid gold. Obtained through the traditional long-aging process originated in Modena, Italy, this vinegar is dark and rich, made from specially selected grapes that are reduced to a must (all the elements of the grapes before fermentation has occurred), and fermented for a year, and left to mature for over 50 years in special wooden casks. The extremely long maturating process makes this particular Balsamico incredibly rare and precious. This rich, full-bodied and smooth Affinato (“sharpened”) inspires reverence amongst the connoisseurs, and should be used with care.

Q: As a white capped Modena, this would indicate that this is a 12 year vinegar, why should we believe this is 50 years old?
A: This is not a white seal balsamic, it's a beige seal balsamic vinegar.
